Fennel! It’s sweet, delicious, and I can’t get enough of it. In this salad, its delicate crunch and flavour contrast perfectly with the meatiness of the lentils. Radish, flaked almonds, and a zesty lemon dressing all work together to make this a fresh and moreish dish.
Fennel, Lentil and Radish Salad with Zesty Lemon Dressing
Preparation time: 10 minutes
1 bulb of fresh fennel, very finely sliced (ideally use a mandoline)
250g pre-cooked lentils (tin or pouch)
5-6 radishes (around 35g), very finely sliced
A handful of fresh parsley, finely chopped
40g flaked almonds
2 tablespoons olive oil
Zest and juice of half an unwaxed lemon
Salt and cracked black pepper to taste
Add all the ingredients to a large salad bowl and combine well.
